is there a way to tell Opera from a proxy not to use HTTP1.1 or at least a pipelining? I'm interested in how to do this in Opera for Windows and Symbian.

Actually, when using Opera through a proxy you have to tell it to use HTTP 1.1 and pipelining. This is done by checking the Enable HTTP 1.1 for proxy preference in the proxy settings.
Opera's default configuration is to use HTTP 1.0 when sending request to proxies. The reason for this is that a number of proxies, especially adbusters, does not handle HTTP 1.1 requests or pipelining correctly (some of the failures were spectacular).
In this mode Opera is still able to use persistent connections, but that requires that the proxy explictly tells it that the connection is persistent for each request served.

And what about Symbian version of Opera, there is no flag for using HTTP1.1 and Opera uses HTTP1.1 and pipelining by default. Is Symbian Opera requires such responses for each request as well?

Opera on Symbian is currently using Symbian's HTTP stack, and their use of HTTP 1.1 and pipelining is out of our control.
