For blades, then I'd generally suggest a wax rather than oil.
Renaissance Wax for the collectors, maybe Johnson's Paste Wax for
everyday.

BreakFree is good for pivots and locks - use the dripper bottle, not
the spray. Don't use it on a knife used for food either.

If it's to keep mechanisms working smoothly, Break-Free CLP is unbeatable.
It's a semisynthetic gun oil with Teflon micropowder suspended in it. That
stuff will even free up rusted-stuck mechanisms - and keep them working
